Freezer cooking

With the upcoming changes in all of our schedules I have been a pinning fool when it comes to freezer cooking and overall meal planning a. I have done a little of it in the past with Breakfast Burritos and Banana Bread. My latest time saver is all about Mr. Picky pants.  Over the last few month's Cooper has decided he does not want to eat meat. He is a total Carbo like his MAMA. One sure fire meal is plain old Spaghetti, Since I don't always have time or want to make up a big batch I decided to make a double batch and freeze small pouches just for him.  HUGE time saver for me, Plus I know he loves it and will get a good meal in.

I fill the baggies up with 1 meals worth, get out as much air as possible and lay them flat on a cookie sheet. Put the cookie sheet in the freezer for a few hours then place them in a large freezer bag with the date.

A big new day.... for all.

It all hit me last night around 10:00 my mind was racing with all the what ifs a mom can think of. I finally talked myself into falling asleep and woke up my extra 30 mins early so I could send my littlest one off to his first full day at daycare. The morning went extremely smooth almost too smooth. Having a 14 year old helps things a ton. It also helped tremendously that he ran right in at daycare and started playing, But part of me just wanted him back home. He has been with daddy for the last 18 months now daddy is starting first shift so Mr. C starts his new job too. All in all it will be good for everyone. We will get more family time at night and I know Coop is in great hands where he will learn and grow.
Can't wait to see him tonight. 6 hours and counting.
